Artificial berries

    Alginate strawberries

Make your own artificial fruit from seaweed extract and milk. Berry-like blobs appear in milk – you can have any colour you like.

Ingredients and equipment that you will need

    Sodium alginate
    Water
    Food colouring
    Milk

    Method and further information

You can buy sodium alginate from cookery shops because it’s used for making fancy jellies. Dissolve some in water and colour it with a few drops of food colouring. Drop teaspoonfuls into milk and you will get little coloured balls as the alginate reacts with calcium in the milk. This is how they make artificial fruit in cheap processed food.

Be careful – you should ask an adult to help you with these experiments. Do your experiments in old yoghurt pots, jam jars or bottle tops. Don’t use cups or glasses in case someone thinks it’s a drink.
